Baked Goat Cheese And Bacon Crostini
- 8 slices bacon
- 12 slices French baguette
- 6 tbsp olive oil
- 7 oz goat cheese, cut into 24 slices
- 6 sprigs fresh thyme, leaves stripped from stems
- 2 sprigs fresh rosemary, leaves stripped from stems
- 3 tbsp Dijon mustard
- 3 tbsp honey
- 1/2 cup white balsamic vinegar
- 1 None lettuce, cut into bite-sized pieces
- Preheat the oven to 400u0b0F. Line a baking sheet with parchment paper. Arrange the bacon slices on one side of the sheet and the bread on the other. Drizzle the bread with 2 tbsp oil and top each piece with 2 slices of cheese, overlapping each other. Sprinkle with the thyme and rosemary. Bake for 12 mins.
- In a bowl, mix the mustard, honey and vinegar. Season with salt and black pepper. Gradually whisk in 4 tbsp oil. Toss half the dressing with the lettuce and arrange on a serving platter.
- Arrange the bread slices on the lettuce, then drizzle with the remaining dressing. Crumble the bacon and sprinkle over the platter.
