Quick Nut Stollen

  1. Preheat the oven to 325u0b0F. Line a baking sheet with parchment paper. Beat the eggs, sugar, vanilla extract and a pinch of salt with an electric mixer on medium speed until creamy. Gradually beat in the quark and 1 stick of the butter. Fold in the nuts, then the flour and baking powder. Knead with your hands to form a smooth dough. Shape into an oval and place on the baking sheet.
  2. Bake for 55-60 mins or until a skewer inserted into the center comes out clean.
  3. Melt remaining 1 stick butter. Brush over the stollen. Sprinkle thickly with the powdered sugar. Cool on a wire rack. Decorate with the ground pistachios.
