Apple Crumble Cheesecake With Caramel Sauce

  1. Preheat oven to 350u0b0F. Grease a 9 1/2 inch springform pan.
  2. For the crumble topping, mix together flour, 1 cup oats, coconut oil, cinnamon and 1/3 cup brown sugar until large crumbs form. Chill.
  3. For the cake crust, in a food processor, coarsely grind cookies and 1 cup oats. Add melted butter. Press into base and sides of prepared pan. Chill.
  4. For the cheesecake filling, mix cream cheese, 1/3 cup brown sugar, granulated sugar, vanilla extract, lemon juice and cornstarch together. Stir in eggs. Transfer to chilled crust. Arrange apple slices on cheesecake and sprinkle with crumble topping. Bake for 45-60 mins. Let cool on a wire rack.
  5. Drizzle cheesecake with caramel sauce before serving.
