Chocolate Marzipan Heart Cake
- 1 1/2 lb dark chocolate
- 1 1/3 cup butter
- 8 None eggs, beaten
- 1 1/2 cups all-purpose flour, sifted
- 6 tbsp apricot jam
- 7 oz white marzipan
- 1/3 lb milk chocolate
- None None powdered sugar, for dusting
- Preheat oven to 325u0b0F. Grease and line an 8 inch heart-shaped loose-bottomed cake pan. Melt 1 1/4 lb dark chocolate with butter. Remove from heat and gradually whisk in eggs. Add flour, transfer to prepared pan and bake for around 1 hour, until a skewer inserted comes out clean. Remove from oven, allow to cool in the pan for 15 mins then remove and let cool completely on a wire rack.
- Cut cake in 1/2 horizontally. Heat jam, strain then spread over cut surfaces of cake. Roll out marzipan, cut out a large heart using the cake pan as a guide and transfer to the top of the cake base. Place the second piece of cake on top.
- Melt remaining dark and milk chocolate then glaze cake and allow to dry. Re-roll marzipan trimmings, cut out heart decorations with heart-shaped cookie cutters and decorate cake. Dust with powdered sugar before serving.
