Chocolate Marzipan Heart Cake

  1. Preheat oven to 325u0b0F. Grease and line an 8 inch heart-shaped loose-bottomed cake pan. Melt 1 1/4 lb dark chocolate with butter. Remove from heat and gradually whisk in eggs. Add flour, transfer to prepared pan and bake for around 1 hour, until a skewer inserted comes out clean. Remove from oven, allow to cool in the pan for 15 mins then remove and let cool completely on a wire rack.
  2. Cut cake in 1/2 horizontally. Heat jam, strain then spread over cut surfaces of cake. Roll out marzipan, cut out a large heart using the cake pan as a guide and transfer to the top of the cake base. Place the second piece of cake on top.
  3. Melt remaining dark and milk chocolate then glaze cake and allow to dry. Re-roll marzipan trimmings, cut out heart decorations with heart-shaped cookie cutters and decorate cake. Dust with powdered sugar before serving.
