Papaya And Coconut Muffins

  1. Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, combine flour, sugar and coconut. In a separate bowl, mix together mashed papaya, diced papaya, oil, milk and eggs. Add to dry ingredients, mixing to just combine.
  3. Divide mixture evenly among muffin liners. Bake 15-20 minutes, until cooked when tested. Transfer to a wire rack to cool completely.
  4. To make Frosting; in a medium bowl, using an electric mixer, beat cream cheese, confectioners' sugar and vanilla together until creamy. Spread onto cooled muffins. Top with diced papaya and toasted coconut.
