Papaya And Coconut Muffins

- 2 1/3 cups self-rising flour, sifted
- 2/3 cup packed brown sugar
- 1 3/4 cups moist coconut flakes, toasted, plus more to garnish
- 3/4 cup papaya, mashed
- 1/2 cup papaya, diced, plus more, to garnish
- 1/2 cup vegetable oil
- 1/2 cup coconut milk
- 2 large eggs
- None None For the Cream Cheese Frosting
- 8 oz cream cheese, at room temperature
- 1 1/3 cups confectioners' sugar, sifted
- 1 tsp vanilla extract
- Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- In a large bowl, combine flour, sugar and coconut. In a separate bowl, mix together mashed papaya, diced papaya, oil, milk and eggs. Add to dry ingredients, mixing to just combine.
- Divide mixture evenly among muffin liners. Bake 15-20 minutes, until cooked when tested. Transfer to a wire rack to cool completely.
- To make Frosting; in a medium bowl, using an electric mixer, beat cream cheese, confectioners' sugar and vanilla together until creamy. Spread onto cooled muffins. Top with diced papaya and toasted coconut.
