Pork With Arugula Salad

  1. Coat pork lightly with polenta.
  2. Heat 2 tbsp oil in a large frying pan over medium-high heat. Cook pork for 2 mins per side, or until cooked to your liking. Drain on paper towels.
  3. Combine apples, vinegar, arugula and onion in a large serving bowl. Whisk remaining oil, mustard and sugar together then pour over arugula and toss to combine. Sprinkle with Parmesan. Serve pork with salad and lemon wedges.
