Pork With Arugula Salad
- 4 None pork loins, pounded
- 1 oz polenta
- 1/4 cup vegetable or olive oil
- 2 None red apples, cored, thinly sliced
- 1 tbsp red wine vinegar
- 4 oz baby arugula
- 1/2 None small red onion, thinly sliced
- 1 tsp Dijon mustard
- 1/2 tsp sugar
- 1 oz Parmesan cheese, shaved
- None None lemon wedges, to serve
- Coat pork lightly with polenta.
- Heat 2 tbsp oil in a large frying pan over medium-high heat. Cook pork for 2 mins per side, or until cooked to your liking. Drain on paper towels.
- Combine apples, vinegar, arugula and onion in a large serving bowl. Whisk remaining oil, mustard and sugar together then pour over arugula and toss to combine. Sprinkle with Parmesan. Serve pork with salad and lemon wedges.
