Waffles And Plum Compote
- 200 g plain flour
- 2 x 570 g cans plums, drained, juice reserved
- 20 g sugar
- 1/2 None cinnamon stick
- 1/2 None lemon, juice and zest peeled into strips with a zester
- 10 g cornflour, mixed with 3-4 tbsp cold water until smooth
- 400 ml whipping cream, whipped until forming stiff peaks
- 30 g butter
- 1 tbsp icing sugar

- Whisk the flour, 1 cup cold water and a pinch of salt until smooth. Allow to rest for 15-20 mins.
- Combine cornstarch with 3-4 tbsp cold water and stir until a smooth paste forms. In a saucepan, bring the plum juice, sugar, cinnamon stick and lemon juice and peel to a boil. Remove the cinnamon and lemon peel, stir in the cornstarch and simmer for 1 min, stirring. Stir in the plums, transfer to a bowl and allow to cool.
- Fold the whipped cream into the waffle batter. Cook waffles in batches following waffle iron manufacturer's instructions.
- Sprinkle with powdered sugar and serve with the plum compote.
