Waffles And Plum Compote

  1. Whisk the flour, 1 cup cold water and a pinch of salt until smooth. Allow to rest for 15-20 mins.
  2. Combine cornstarch with 3-4 tbsp cold water and stir until a smooth paste forms. In a saucepan, bring the plum juice, sugar, cinnamon stick and lemon juice and peel to a boil. Remove the cinnamon and lemon peel, stir in the cornstarch and simmer for 1 min, stirring. Stir in the plums, transfer to a bowl and allow to cool.
  3. Fold the whipped cream into the waffle batter. Cook waffles in batches following waffle iron manufacturer's instructions.
  4. Sprinkle with powdered sugar and serve with the plum compote.
