Microwave Chocolate Pecan Brownies
- 6 1/3 tbsp butter, at room temperature
- 3 oz good-quality dark chocolate, chopped
- 1/2 cup packed light brown sugar
- 1/2 cup sugar
- 2/3 cup self-rising flour
- 1/4 cup chopped pecans
- 2 None large eggs, beaten
- 1/2 tsp vanilla extract
- None None Confectioners' sugar, for dusting
- Grease a 10-inch microwave-safe pie plate. Grease the outside edges of a microwave-safe 3-inch ramekin and place in center of dish, base-side down, to form a ring-style pan.
- Place the butter in a microwave-safe bowl, cover and microwave on high for 1 min. Immediately add chocolate to butter and stir until chocolate has melted and mixture is smooth.
- In a separate bowl, combine both sugars, flour, and pecans. Add the chocolate mixture, eggs, and vanilla; stir with a wooden spoon until well combined. Pour into prepared dish. Microwave, uncovered, on medium for 10 mins. Cool for 5 mins before cutting into pieces, then dust with confectioners' sugar. Serve.
