Spiced Pumpkin Scone
- 4 tbsp (1/2 stick) cold butter, plus additional, to serve
- 3 1/2 cups self-rising flour
- 1/2 tsp baking powder
- 1/2 cup firmly packed brown sugar, plus additional, for sprinkling
- 2 tsp cinnamon
- 1/2 tsp mixed spice, such as pumpkin pie spice
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1 None egg
- 1/2 cup buttermilk
- 1 cup canned pumpkin
- 3 tbsp milk, for glazing
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- Place butter, flour, baking powder, sugar and spices in a food processor; pulse until fine crumbs form. Or rub butter into dry ingredients with fingertips.
- Whisk egg, buttermilk and pumpkin in a medium bowl. Add to flour mixture. Pulse or stir to combine.
- Turn the dough onto a floured surface. Dust dough with flour so you can shape the dough without it sticking to your hands. Form into an 8-inch round. Place on prepared pan. Brush with milk and sprinkle with additional brown sugar. Cut 8 wedges into the dough without separating the sections.
- Bake for 25 mins, or until well risen and golden. Separate sections and serve with butter.
