Polish Sausage And Pancake Casserole
- 4 None eggs
- 2 1/2 cups 2% or whole milk
- 1 cup all-purpose flour
- 2 tsp canola oil
- 3 1/2 tbsp butter
- 2 cups vegetable stock
- 1/4 lb Gouda cheese, grated
- 1 None onion, peeled and finely chopped
- 1 2/3 lb spinach
- None None grated nutmeg, to taste
- 1/3 lb cherry tomatoes, cut in half
- 8 None Polish sausages (approx 3 oz), halved lengthwise
- Preheat oven to 400u0b0F. Whisk 1 egg, 1/2 cup milk and pinch of salt. Whisk in 1/2 cup flour then let batter rest for 15 mins. Heat 1 tsp oil in a 10 inch nonstick pan and make 3 pancakes with batter.
- For the sauce, melt butter in a saucepan, add 1/4 cup flour and cook for 3-4 mins. Slowly add 2 cups milk and stock and bring to a boil, stirring. Add cheese and simmer for 3-4 mins. Season then remove from heat and let cool slightly. Whisk in 3 eggs, 1 at a time.
- Meanwhile, heat 1 tsp oil in a pan and sweat onion until soft. Add spinach and season. Add nutmeg to taste and cook for 4 mins. Drain.
- Place 1 pancake in a 10 inch round baking dish. Add 1/3 of spinach, sausages, tomatoes and sauce. Repeat with remaining components. Bake for 30-40 mins. Cover with foil if necessary to prevent burning.
