Sausages And Celery Root Mash
- 2/3 lb potatoes, peeled and cut into large chunks
- 1 1/3 lb celery root, peel and cut into large chunks
- 1 tbsp grapeseed oil
- 1 None large red onion, peeled and finely sliced
- 8 None sausages
- 1 tbsp all-purpose flour
- 1 1/2 cups vegetable or chicken stock
- 1/2 cup whole milk
- 3 1/2 tbsp butter
- 10 None green onions, finely sliced
- In a steamer, cook the potatoes and celery root for 20 mins, or until tender.
- Heat the oil in a frying pan and saute the onion for 2-3 mins, until softened. Add the sausages and cook, turning, until golden brown and cooked through. Remove and drain on a paper towel.
- Sprinkle the flour into the pan and cook for 1 min, then add the stock a little at a time, stirring between each addition until a smooth gravy forms.
- Transfer the potatoes and celery root to a bowl, add the milk and butter and mash. Stir in the green onions. Serve with the sausages and gravy.
