Baked Salami Pasta
- 10.5 oz large shell pasta
- 1 tbsp vegetable or olive oil
- 1 None medium red onion, finely chopped
- 1 clove garlic, minced
- 3.5 oz roasted red pepper, chopped
- 3.5 oz grilled eggplant, chopped
- 3 oz pitted kalamata olives
- 1 (25 oz) jar tomato sauce
- 3.5 oz mild salami, chopped
- 5 oz fresh ricotta cheese
- 5 oz mozzarella cheese, grated
- None None fresh basil leaves, to serve
- Preheat oven to 350u0b0F. Cook pasta in boiling, salted water for 10-12 mins, or until tender. Rinse under cold running water until cool then set aside.
- Heat oil in a large frying pan over medium heat. Cook onion and garlic for 2 mins, or until onion is soft. Add peppers, eggplant, olives, tomato sauce, salami and pasta. Transfer to a large baking dish. Place spoonfuls of ricotta over pasta and sprinkle with mozzarella. Bake for 20 mins, or until browned. Serve topped with basil.
