Paprika And Vegetable Turkey Bake
- 2 lbs new potatoes, cut into small chunks
- 2 None onions, peeled and sliced
- 4 None garlic cloves, peeled and halved
- 9 oz small mushrooms, brushed clean
- 11 oz carrots, peeled and sliced
- 2 1/4 lbs boneless, skinless turkey thighs, cut into chunks
- 2 tbsp honey
- 4 tbsp sunflower oil
- 2-3 tsp paprika
- few sprigs fresh marjoram, to garnish
- None None sour cream or creme fraiche, to serve
- Preheat the oven to 400u0b0F. Place the potatoes, onion, garlic, mushrooms, carrot and turkey in a large bowl. Add the honey, oil and paprika and season well with salt and freshly ground black pepper.
- Spread out onto a large baking sheet and add 1 cup water. Roast in the oven for 1 hour, covering loosely with aluminum foil for the last 20 mins of roasting time. Serve garnished with marjoram sprigs and with spoonfuls of sour cream or creme fraiche.
