Pasta Salad With Fava Beans, Apricots And Bacon

  1. Cook pasta according to package instructions then drain and set aside to cool.
  2. Heat oil in a frying pan and fry bacon until crispy. Add onion and curry powder and cook for 2-3 mins then deglaze pan with stock and vinegar. Toss with pasta and apricots then allow to cool for about 1 hour.
  3. Cook beans in boiling salted water for 8-10 mins. Drain, rinse under cold water and remove skin. Add to pasta along with chives and creme fraiche (or sour cream, if using). Season and serve sprinkled with chopped chives.
