Pork And Ramen Frittata
- 5 tsp vegetable or olive oil
- 1 None medium Spanish onion, chopped
- 1 None medium red pepper, chopped
- 1 clove garlic, minced
- 2 None medium zucchini, coarsely grated
- 3.5 oz baby spinach, plus 2 oz extra, to serve
- 2 packages chicken-flavored ramen noodles
- 4 None eggs
- 4.5 oz roast pork, shredded
- 3.5 oz Parmesan cheese, freshly grated
- Preheat broiler.
- Heat 1 tbsp oil in a 9 1/2 inch nonstick frying pan over medium heat. Cook onion and pepper for 5 mins, or until onion has softened. Add garlic and zucchini. Cook for 3 mins, or until zucchini has softened. Add spinach and cook until just wilted.
- Meanwhile, cook ramen in boiling water, reserving flavor packets, for 2 mins, or until tender. Drain.
- Whisk together eggs and reserved flavor packets. Add vegetables, noodles, pork and 1/2 of the Parmesan. Season.
- Wipe out frying pan. Brush with remaining oil. Add egg and vegetable mixture to frying pan. Cover and cook over medium heat for 8-10 mins, or until browned underneath and almost set. Sprinkle with remaining Parmesan. Broil for 5 mins, or until set.
- Cut frittata into wedges. Serve topped with extra spinach.
