Pork And Ramen Frittata

  1. Preheat broiler.
  2. Heat 1 tbsp oil in a 9 1/2 inch nonstick frying pan over medium heat. Cook onion and pepper for 5 mins, or until onion has softened. Add garlic and zucchini. Cook for 3 mins, or until zucchini has softened. Add spinach and cook until just wilted.
  3. Meanwhile, cook ramen in boiling water, reserving flavor packets, for 2 mins, or until tender. Drain.
  4. Whisk together eggs and reserved flavor packets. Add vegetables, noodles, pork and 1/2 of the Parmesan. Season.
  5. Wipe out frying pan. Brush with remaining oil. Add egg and vegetable mixture to frying pan. Cover and cook over medium heat for 8-10 mins, or until browned underneath and almost set. Sprinkle with remaining Parmesan. Broil for 5 mins, or until set.
  6. Cut frittata into wedges. Serve topped with extra spinach.
