Parsley Breaded Fish
- 4 None thick white fish fillets
- 1 cup soft fresh breadcrumbs
- 1/4 cup finely chopped flat-leaf parsley
- 1/4 cup grated mozzarella cheese
- 2 tbsp vegetable or olive oil
- 2 medium zucchini, sliced
- 8 oz cherry tomatoes
- 1 medium yellow pepper, chopped
- 1/2 cup loosely packed flat-leaf parsley leaves
- None None Salad leaves and lemon wedges, to serve
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- Place the fish on the prepared pan. Combine the breadcrumbs, parsley and mozzarella cheese in a medium bowl. Season. Press the mixture over the top of the fish. Drizzle with half the oil. Bake for 12 mins or until light golden and cooked through.
- Meanwhile, preheat a large grill pan on high heat. Add the zucchini, tomatoes and pepper. Cook, in batches, for 2 mins or until golden and just soft. Transfer to a medium bowl. Add the remaining oil and parsley leaves; toss to combine. Season.
- Serve the fish with vegetables, salad leaves and lemon wedges.
