Gingerbread Men
- 1/2 cup butter, chopped
- 1/2 cup granulated sugar
- 1 None large egg yolk
- 2 1/4 cups all-purpose flour
- 3 tsp ground ginger
- 1 tsp baking soda
- 1/2 cup golden syrup or honey
- None None candied cherries and assorted candies, to decorate
- None None FOR THE ICING
- 1 None large egg white
- 1 1/4 cups powdered sugar, sifted
- 2-3 drops lemon juice
- None None food coloring, of choice
- Preheat oven to 350u0b0F. Lightly grease 2 baking trays or line with parchment paper.
- Beat butter and sugar for 2-3 mins, until creamy. Add egg yolk and mix well. Sift flour, ginger and baking soda together. Warm golden syrup in a saucepan over low heat then lightly mix into butter mixture until combined. Add flour mixture and mix until combined.
- Turn dough out onto a lightly floured work surface and knead until smooth. Roll out to 1/4 inch thick then cut out gingerbread men with a floured cookie cutter. Arrange on prepared trays and bake for 10-15 mins. Let cool on trays.
- Meanwhile, to make the icing, whip egg white until frothy. Add powdered sugar, a spoonful at a time, beating well after each addition. When icing reaches a piping consistency, mix in lemon juice. Add food coloring. Use to decorate cooled gingerbread men. Decorate with candied cherries and assorted candies.
