Chilled Pea Soup With Green Tea Cream

  1. Bring a pan of water to a boil and cook the peas for 4-5 minutes, until tender. Drain and run under cold water.
  2. Place the peas in a blender with the apple, ginger, apple juice and 1 cup of water. Blend until smooth and season with salt and pepper. Place in the fridge and chill at least 1 hour.
  3. Meanwhile, place the heavy cream in a bowl and beat with an electric whisk until soft peaks form. Stir in the green tea powder and season with pepper.
  4. Serve the pea soup in bowls or glasses, with a dollop of the green tea cream and some apple slices to garnish.
