Chilled Pea Soup With Green Tea Cream
- 1 1/2 cups frozen peas
- 1 None Granny Smith apple, peeled, cored and chopped
- 1 oz fresh ginger, peeled and finely chopped
- 2/3 cup apple juice
- 1/2 cup heavy cream
- 1/2 tsp green tea powder
- 1/2 None green apple, sliced to garnish
- Bring a pan of water to a boil and cook the peas for 4-5 minutes, until tender. Drain and run under cold water.
- Place the peas in a blender with the apple, ginger, apple juice and 1 cup of water. Blend until smooth and season with salt and pepper. Place in the fridge and chill at least 1 hour.
- Meanwhile, place the heavy cream in a bowl and beat with an electric whisk until soft peaks form. Stir in the green tea powder and season with pepper.
- Serve the pea soup in bowls or glasses, with a dollop of the green tea cream and some apple slices to garnish.
