Strawberry Shortcakes

  1. Preheat the oven to 375u0b0F. Sift the flour and powdered sugar into a bowl. Add butter and vanilla. Rub in with fingertips until mixture forms a dough. Knead until smooth. Wrap in plastic wrap. Refrigerate for 10 mins.
  2. Roll dough on a lightly floured surface to 1/4 inch-thickness. Cut out 12 rounds with a 3-inch cookie cutter. Transfer to a baking sheet.
  3. Bake for 10-12 mins until pale golden. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
  4. Mix strawberries and jam. Use to sandwich the biscuits with whipped cream. Dust with powdered sugar.
