Hoisin Lamb Stir-Fry
- 1 cup jasmine rice
- 2 tbsp sesame seeds, toasted
- 2 tbsp vegetable or peanut oil
- 7 oz green beans, cut into 1-inch engths
- 2 None celery stalks, thinly sliced diagonally
- 1 None red pepper, thinly sliced
- 1 None red onion, cut into wedges
- 1 lb boneless lamb, cut into strips
- 1/4 cup hoisin sauce
- 2 tbsp chopped cilantro
- Cook rice according to package directions. Stir in sesame seeds.
- Meanwhile, heat a wok or large skillet on medium heat. Add 1 tbsp of the oil; swirl to coat surface. Add beans; stir-fry for 8 mins or until just tender. Transfer to a bowl. Add celery, pepper and onion; stir-fry for 5 mins or until tender. Transfer to bowl.
- Heat remaining 1 tbsp oil in wok on medium-high heat. Add lamb; stir-fry, in batches, for 1 min or until browned. Return vegetables to wok with hoisin sauce. Stir-fry for 2 mins or until heated through. Sprinkle with cilantro. Serve with rice.
