Ginger Crab And Watermelon Bites
- 10 oz fresh crabmeat
- 3 tbsp chopped cilantro
- 4 None green onions, finely chopped
- 2 tbsp pickled ginger
- 6 None 2inch-thick watermelon rounds, seeds removed
- 1/4 cup shredded coconut, toasted
- None None fresh parsley, to serve
- None None Ginger Dressing
- 1 None lime, juiced
- 1 tbsp fish sauce
- 1 None long red chili, seeded, finely chopped
- 2 None kaffir lime leaves, finely chopped
- 2 tsp finely grated ginger
- 1/2 tsp sesame oil
- In a medium bowl, combine crab, cilantro, green onions and pickled ginger.
- To make ginger dressing, in a small bowl, whisk together all ingredients. Drizzle over crab salad just before serving and toss well.
- Top watermelon rounds with crab mixture. Serve sprinkled with coconut. Garnish with parsley.
