Date And Frangelico Loaf
- 2 cups pitted dried dates, finely chopped
- 1/4 cup Frangelico liqueur
- 12 tbsp (1 1/2 sticks) butter, softened
- 3/4 cup firmly packed brown sugar
- 2 tsp mixed spice, such as pumpkin pie spice
- 3 None eggs
- 1 1/4 cups self-rising flour, sifted
- 1/2 cup ground hazelnuts
- None None FOR THE COFFEE ICING
- 1 cup powdered sugar, sifted
- 2 tsp instant coffee granules
- 1 tbsp butter, softened
- 1 tsp vanilla extract
- Combine dates and Frangelico in a large bowl. Let stand for 30 mins.
- Preheat the oven to 325u0b0F. Lightly grease and line an 9 x 5-inch loaf pan with parchment paper.
- Beat butter, brown sugar and spice in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in date mixture followed by flour and ground hazelnuts. Spoon into prepared pan.
- Bake 1-1 1/4 hours, until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
- For the coffee icing, whisk all ingredients and 1 tbsp hot water in a medium bowl until thick and smooth. Spread over cooled loaf.
