Apple And Almond Brittle Cake
- 105 g caster sugar + 1 tbsp
- 100 g whole almonds
- 150 g cream cheese
- 6 tbsp sunflower oil
- 2 medium eggs
- 6 tbsp semi skimmed milk
- 300 g plain flour
- 3 tsp baking powder
- 2 None apples, halved, cored and sliced
- 150 g whipping cream
- 250 g sour cream
- 1 tsp vanilla essence
- Preheat oven to 350u0b0F. Grease and flour a 10 inch loaf pan. Caramelize 2 tbsp sugar in a saucepan then add almonds and stir to coat. Transfer to a baking sheet lined with a silpat and set aside to harden. Break into small pieces.
- Mix together cream cheese, oil, eggs, milk, 1/3 cup sugar, flour and baking powder until smooth. Transfer 1/3 to prepared loaf pan. Top with 1/3 of apple slices and 1/3 of almond brittle. Repeat layers of dough, apple slices and almond brittle. Finish with remaining dough. Bake for about 35 mins then remove and let cool on a wire rack.
- Whip heavy cream to stiff peaks then fold into sour cream. Add 1 tbsp sugar and vanilla extract. Remove cake from pan, top with whipped cream then decorate with remaining apple slices and almond brittle.
