Sausage, Basil And Tomato Pasta
- 1 tbsp olive oil
- 1 lb Italian sausages, casings removed, shaped into small meatballs
- 2 sprigs fresh basil
- 1 lb cherry tomatoes
- 14 oz short pasta, such as fusilli or penne
- 7 oz green beans, trimmed, cut into 1 inch pieces
- 1.5 oz Parmesan cheese, grated
- Preheat broiler.
- Heat oil in a frying pan over high heat. Saute meatballs for 3-4 mins, until browned. Add basil and cook for 1 min. Add tomatoes and 1 cup water. Bring to a boil, reduce heat to low and simmer for 10 mins, until meatballs are cooked through.
- Meanwhile, cook pasta in salted boiling water until al dente. Drain.
- Add green beans to meatballs and cook for 1-2 mins, until tender. Add pasta and toss to combine. Season. Discard basil. Transfer to a large baking dish and sprinkle with Parmesan. Broil for 2-3 mins, until cheese melts. Serve immediately.
