Bahamian Fish Soup
- 2 lb. red snapper filet or sea bass (thick filet)
- 3 oz. salt pork
- 3 medium size onions
- 1 whole stalk celery
- 1 stick butter or margarine
- 2 Tbsp. Wesson oil
- bay leaves
- basil
- oregano
- cumin powder
- crushed red pepper
- Cut up salt pork into tiny pieces.
- Use Wesson oil in small skillet to brown salt pork.
- Add salt pork and drippings to 2 quarts boiling water in soup pot.
- Chop up onions and celery and add to pot.
- Season with butter or margarine, bay leaves, basil, oregano, cumin powder and crushed red pepper to make spicy.
- Let boil until cooked.
- Cut fish filet into small chunks.
- Add fish to pot and let boil 10 to 12 minutes.
- Serve over steamed rice. Serves 6 to 8 guests.
