Herb And Feta Meatloaf

  1. Preheat oven to 350u0b0F. Lightly grease and line an 8 inch pie dish with parchment paper.
  2. In a large bowl, combine beef, breadcrumbs, herbs, egg, salsa, sour cream, onion and zest. Season to taste and mix well.
  3. Stir in feta. Press firmly into dish. Spread top with extra salsa and press in tomatoes. Bake 35-40 minutes, or until juices run clear when tested with a skewer.
  4. Rest 10 minutes before slicing into wedges. Serve with salad or vegetables.
