Rice Patties With Herb Tomato Sauce
- 1 3/4 cups whole grain rice
- 1 None onion, finely chopped
- 4 tbsp oil, divided
- 1 cup cheddar cheese, grated
- 7 stems parsley, leaves removed and chopped
- 2 tbsp breadcrumbs
- 2 tbsp all-purpose flour
- 2 None eggs
- 1 jar tomato pasta sauce with herbs
- Cook the rice in boiling salted water according to package instructions.
- Heat 1 tsp oil in a frying pan and fry the onions in it for 2-3 minutes, then place in a bowl. Drain the rice and allow to cool slightly.
- Leaving a tbsp of parsley for garnish, add the parsley, cheese, bread crumbs, rice, flour and egg to the onions. Season well and mix to make a sticky ball. With wet hands, form 12 patties.
- In a nonstick pan, use the 3 tbsp of oil in 1 tbsp portions to fry batches of patties until golden brown. Turn once or twice while frying for about 4 mins. Remove, drain on paper towels and keep warm.
- Meanwhile, heat the tomato sauce. Serve the patties with the tomato sauce and garnish with parsley leaves. .
