Curried Sausage And Vegetable Casserole

  1. Preheat oven to 350u0b0F.
  2. Heat a large frying pan over high heat. Cook sausages for 4-5 mins, turning, until golden all over. Transfer to an 8x12 inch shallow baking dish.
  3. Add celery, onion and garlic to pan and saute for 2-3 mins. Add curry powder and chili powder. Cook, stirring, for 1 min, or until fragrant. Stir in tomatoes, wine and 1/2 cup water. Bring to a boil then add zucchini and eggplant. Season to taste. Pour over sausages. Transfer to oven and bake for 10-15 mins, or until vegetables are tender and sausages are cooked through.
  4. Sprinkle with parsley to serve.
