Two Way Minestrone
- 12 oz. fish fillets, skinless, boneless chicken breast halves, turkey breast or tenderloin steaks
- 2 (14 1/2 oz.) cans chicken broth
- 1 (15 oz.) can garbanzo beans, rinsed and drained
- 1 c. loose pack frozen mixed vegetables
- 1 medium chopped onion
- 1/2 c. cavatelli or other small pasta (shells, wheels)
- 1 tsp. dried basil or thyme
- 1/4 tsp. pepper
- 1 (14 1/2 oz.) can Italian style stewed tomatoes
- Cut fish or poultry into 1-inch pieces.
- In a large saucepan, stir in broth, beans, vegetables, onion, pasta and spices.
- Bring to a boil; reduce heat.
- Simmer, covered for 10 minutes.
- Stir in undrained tomatoes.
- Add fish or poultry.
- Return to boiling, reduce heat.
- Simmer covered.
- For fish, allow 2 to 3 minutes.
- For poultry, allow 4 to 5 minutes.
- Serve with garlic bread.
- Makes 4 servings.
