Two Way Minestrone

  1. Cut fish or poultry into 1-inch pieces.
  2. In a large saucepan, stir in broth, beans, vegetables, onion, pasta and spices.
  3. Bring to a boil; reduce heat.
  4. Simmer, covered for 10 minutes.
  5. Stir in undrained tomatoes.
  6. Add fish or poultry.
  7. Return to boiling, reduce heat.
  8. Simmer covered.
  9. For fish, allow 2 to 3 minutes.
  10. For poultry, allow 4 to 5 minutes.
  11. Serve with garlic bread.
  12. Makes 4 servings.
