Sesame Noodles With Peanuts And Basil
- 1 tbsp peanut oil
- 1 tbsp finely chopped ginger
- 2 cloves garlic, crushed
- 2 tbsp sesame oil
- 1 1/2 tbsp soy sauce
- 1 1/2 tbsp balsamic vinegar
- 1 None heaping tbsp sugar
- 1/2 tsp salt
- 1 lb fresh Chinese egg noodles
- 6 None green onions, thinly sliced diagonally
- 1/2 cup roasted peanuts
- 1/4 cup coarsely torn basil leaves
- Heat oil in a small skillet on medium heat. Saute ginger and garlic for 1 min. Transfer to a large bowl. Whisk in sesame oil, soy sauce, balsamic vinegar, sugar and salt.
- Place noodles in a colander in the sink and gently separate strands. Bring a large saucepan of salted water to a boil. Add noodles and cook for 3-4 mins, stirring occasionally, until tender. Drain and rinse under cold water. Drain again and transfer to bowl with soy mixture.
- Add green onions; toss well. Let stand for 1 hour, tossing occasionally.
- Add peanuts and basil. Toss gently and season to taste. Serve at room temperature.
