Grilled Chicken, Chorizo And Mozzarella Kebabs
- 8 None wooden skewers
- 1 lb boneless skinless chicken thighs, cubed
- 1 None lemon, juiced
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tsp sweet paprika
- 4 oz chorizo sausage, sliced
- 7 oz mozzarella cheese, diced
- None None Oil, for brushing
- None None Lemon wedges and parsley leaves, to serve
- Soak skewers in water for 30 mins to prevent burning. Combine chicken, lemon juice, oil, garlic and paprika in a large bowl. Cover and refrigerate for 30 mins.
- Preheat the grill on medium-high. Thread chicken, chorizo and mozzarella alternately onto skewers. Brush with oil.
- Grill skewers for 10-12 mins, turning on all sides, until chicken is cooked through. Serve with lemon wedges and parsley leaves.
