Deviled Sausages
- 1 tbsp olive oil
- 8 links sausage
- 1 None onion, halved, sliced
- 1 None pear, cored, sliced
- 1/4 cup ketchup
- 2 tbsp cornstarch
- 2 tbsp Worcestershire sauce
- 1/2 tsp curry powder
- 1/2 tsp ground cumin
- 1 tbsp brown sugar
- 1/2 cup raisins
- None None fresh thyme sprigs, for garnish
- None None couscous and seasonal greens, to serve
- Heat oil in a large frying pan over medium-low heat. Cook sausages for 4-5 mins, until browned. Add onion and pear. Cook for 2 mins. Drain off any excess oil.
- Meanwhile, whisk together ketchup, cornstarch, Worcestershire sauce, spices, brown sugar and 2 cups water. Add to frying pan along with raisins. Cover and simmer for 8-10 mins, stirring occasionally, until sausages are cooked through and sauce thickens.
- Serve sausages over couscous. Garnish with fresh thyme and serve with seasonal greens.
