Lemongrass Beef Noodles
- 7 oz bean thread noodles
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp brown sugar
- 1 lb beef sirloin steak, trimmed and thinly sliced
- 1 stick lemongrass, white part only, finely chopped
- 1 None long red chili pepper, seeded and finely chopped
- 8 oz choy sum or other Asian greens, trimmed, stalks halved, leaves shredded
- 2 tbsp chopped unsalted peanuts
- None None Lime wedges, to serve
- Place noodles in a large heatproof bowl. Add boiling water to cover. Set aside to soak for 5 mins. Rinse with cold water. Drain well.
- Combine lime juice, soy sauce, fish sauce and sugar in a small bowl. Set aside.
- Heat a wok or large skillet on high heat. Spray lightly with no stick cooking spray. Add beef in 2 batches and stir-fry for 2-3 mins, until golden. Transfer to a plate.
- Return wok to high heat. Spray with a little more cooking spray. Add lemongrass and chili pepper. Stir-fry for 1 min, or until fragrant. Add choy sum stalks and 2 tbsp water. Stir-fry for 1-2 mins.
- Add noodles, beef, lime juice mixture and choy sum leaves. Toss for 2 mins, or until heated through. Divide among bowls; sprinkle with peanuts. Serve with lime wedges.
