White Chocolate Mud Cake
- 6 oz white chocolate, chopped
- 1 1/2 cups (3 sticks) unsalted butter, chopped
- 3/4 cup sugar
- 1/2 cup milk
- 2 1/2 cups flour
- 3/4 cup self-rising flour
- 1 tsp vanilla extract
- 3 None eggs
- None None FOR THE WHITE CHOCOLATE GANACHE
- 1/2 cup heavy cream
- 12 oz white chocolate, chopped
- Preheat the oven to 325u0b0F. Grease a deep 9-inch round cake pan and line bottom with parchment paper.
- Place the chocolate, butter, sugar and milk in large saucepan on low heat. Stir until smooth. Pour into a large bowl and cool for 15 mins.
- Whisk in the combined sifted flours, vanilla extract and eggs. Pour into the prepared pan.
- Bake for about 2 hours until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
- For the white chocolate ganache, bring cream to a boil in small saucepan. Pour over chocolate in medium bowl. Stir until chocolate melts. Refrigerate, stirring occasionally, about 30 mins or until ganache is of a spreadable consistency. Place the cake, top-side up, onto a plate. Spread top and sides with the ganache.
