Sausage And Broccoli Dhal
- 1 tbsp olive oil
- 4 None thick sausages
- 1 None onion, thinly sliced
- 3 tsp ground coriander
- 2 tsp ground cumin
- 2 1/2 cups chicken stock or water
- 1 (13.5 oz) can chopped tomatoes
- 5 oz red lentils
- 1 head broccoli, cut into florets
- 3/4 cup plain yogurt, to serve
- 1/2 cup fresh cilantro leaves, to serve
- None None steamed rice, to serve
- Heat oil in a large, heavy-bottomed saucepan over medium heat. Cook sausages for 4-6 mins, turning, until browned all over. Transfer to a plate. When cool enough to handle, slice.
- Increase heat to high. Cook onion, stirring, for 4-5 mins, until golden. Add spices and cook for 1 min, stirring. Stir in stock and tomatoes. Bring to a simmer then stir in lentils. Reduce heat and simmer, covered, for 20-25 mins, until lentils are tender.
- Add broccoli and cook for 3-5 mins, until tender. Serve on a bed of rice, topped with a dollop of yogurt and sprinkled with cilantro.
