Pea Fritters With Chili Coconut

  1. Combine coconut and 1/2 cup boiling water. Cover with plastic wrap and set aside for 15 mins, or until water is absorbed. Transfer to a food processor. Add chilies and process until smooth. Set aside.
  2. Whisk together flour, garam masala and 1 cup water until smooth. Add onion and peas. Season. Heat oil in a large heavy-bottomed saucepan over medium heat. Working in batches, shallow-fry pea mixture (about 1 tbsp at a time) for 4 mins, or until golden brown. Drain on paper towels.
  3. Serve warm fritters with chilli coconut.
