Steamed Orange Cake

  1. Grease and line a bundt pan with orange slices.
  2. Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well between additions. Add cinnamon, flour and milk and mix until combined. Carefully transfer to prepared pan, smooth surface and cover with a tight-fitting lid.
  3. Place pan in a large heavy-bottomed saucepan. Pour enough boiling water into saucepan to come halfway up side of bundt pan. Bring to a boil, cover and reduce heat. Steam cake for 1 hour, or until a skewer inserted in the center comes out clean.
  4. Meanwhile, stir reserved orange juice and marmalade over medium heat for 3 mins, or until marmalade melts. Bring to a boil. Boil for 3 mins, or until reduced slightly.
  5. Let cake cool for 5 mins then turn out onto a serving plate. Serve with orange sauce and custard.
