Steamed Orange Cake
- 5 None oranges, 2 peeled and sliced, remainder juiced
- 3/4 cup butter, softened
- 1 cup granulated sugar
- 2 None eggs, at room temperature
- 1 tsp ground cinnamon
- 2 1/4 cups self-rising flour
- 1 cup milk
- 1/4 cup orange marmalade
- None None vanilla custard or heavy cream, to serve
- Grease and line a bundt pan with orange slices.
- Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well between additions. Add cinnamon, flour and milk and mix until combined. Carefully transfer to prepared pan, smooth surface and cover with a tight-fitting lid.
- Place pan in a large heavy-bottomed saucepan. Pour enough boiling water into saucepan to come halfway up side of bundt pan. Bring to a boil, cover and reduce heat. Steam cake for 1 hour, or until a skewer inserted in the center comes out clean.
- Meanwhile, stir reserved orange juice and marmalade over medium heat for 3 mins, or until marmalade melts. Bring to a boil. Boil for 3 mins, or until reduced slightly.
- Let cake cool for 5 mins then turn out onto a serving plate. Serve with orange sauce and custard.
