Hoisin Pork Belly With Salted Crackling
- 2 lb 10 oz boneless pork belly, rind on
- 1 stick cinnamon
- 2 whole star anise
- 5 tbsp hoisin sauce
- 1 inch strip orange rind (removed with a vegetable peeler)
- 1/2 cup orange juice
- 1/2 cup water
- 1 tbsp fine kosher salt
- 1 bunch choy sum or baby bok choy, trimmed
- Using small sharp knife, score pork rind at shallow 1/4-inch intervals.
- Combine cinnamon, star anise, hoisin, rind, juice, and water in a 1 1/2-gallon pressure cooker. Place pork, rind-side up, on oiled wire rack in cooker; secure lid. Bring cooker to high pressure. Reduce heat to stabilize pressure; cook 30 mins.
- Release pressure using the quick release method ; remove lid. Remove pork from cooker; strain cooking liquid into small saucepan.
- Place pork, rind-side up, on wire rack over large shallow baking dish; sprinkle rind with salt. Preheat broiler. Broil pork about 10 mins or until crackling is browned lightly and crisp.
- Meanwhile, bring reserved cooking liquid to a boil. Boil, uncovered, about 5 minutes or until sauce thickens slightly. Add greens, cook until wilted.
- Cut pork into six pieces. Serve pork with sauce and greens.
