Lentil Burgers
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) green lentils, drained and rinsed
- 3 tbsp vegetable oil
- 1 None red onion, chopped
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1 None carrot, grated
- 3 tbsp chopped cilantro
- 1/2 cup fresh breadcrumbs
- 1/4 cup chopped mixed nuts
- 4 None burger buns, toasted
- None None Sliced tomatoes and red onion, to serve
- Puree chickpeas and lentils in a food processor. Heat 2 tsp of the oil in a medium skillet on medium heat. Saute the onion, garlic, cumin and cayenne pepper for about 3 mins until soft. Add to pureed mixture with carrot and cilantro. Form evenly into 4 burgers. Mix the breadcrumbs and nuts on a large plate. Coat each burger with the mixture, pressing on firmly. Refrigerate the burgers for 1 hour.
- Heat the remaining oil in a large skillet on medium heat. Cook the burgers for 3 mins on each side or until golden and heated through. Drain on paper towels.
- Serve the burgers in the buns with sliced tomatoes and red onion.
