Sweet Shortbread Spirals
- 1/2 cup sugar
- 7 tbsp cold butter, chopped coarsely
- 1 1/3 cups flour
- 1 None egg yolk
- 1 tbsp milk
- 1 1/2 cups fruit mincemeat
- 1/4 cup apricot jam, warmed and strained
- Process the sugar, butter and sifted flour in food processor until crumbly. Add the egg yolk and milk and process until combined. Knead the dough on a floured surface until smooth. Wrap in plastic wrap and refrigerate for 30 mins.
- Meanwhile, process fruit mincemeat until finely chopped.
- Roll the dough between two sheets of parchment paper to 12 x 10-inch rectangle. Spread the fruit mincemeat evenly over the rectangle, leaving a 1/4 inch border. Using the paper as a guide, roll rectangle tightly from short side to enclose filling. Wrap the roll in parchment paper and refrigerate for 30 mins.
- Preheat the oven to 325u0b0F. Grease two baking pans and line with parchment paper.
- Trim the edges of the roll. Cut the roll into 1/4-inch slices. Place the slices, cut-side up, on prepared pans.
- Bake about 20 mins. Cool in pans on a wire rack. Brush tops with jam.
