Sausage Cannelloni

  1. Heat oil in a saucepan and saute onions and garlic. Add curry powder and sugar and cook for 2- 3 mins then add tomato paste. Add tomatoes and stock, season, bring to a boil then simmer for 12-15 mins, stirring occasionally.
  2. Meanwhile, mix sausage meat with chilies and herbs then transfer to a piping bag. Stuff cannelloni tubes and arrange in a baking dish. Cover with sauce then top with grated cheese and bake for about 40 mins until golden brown.
