Classic Strawberry Shortcake
- 2 c. flour
- 1/4 c. sugar
- 4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. butter (margarine)
- 1/2 c. milk
- 2 eggs, separated
- 2 pt. baskets strawberries, cleaned
- 1 c. whipping cream, whipped and sweetened
- additional sugar
- dash of nutmeg
- Sift flour, sugar, baking powder, salt and nutmeg into a large bowl.
- Cut in butter to resemble coarse meal.
- Blend milk and egg yolks in a bowl with a fork.
- Stir into flour mixture to make a soft dough.
- Divide dough into six portions.
- Form into balls.
- Pat balls out on a greased baking sheet to 3-inch circles, moistening fingers with egg whites.
- Brush cake with egg whites.
- Sprinkle with sugar.
- Bake at 450u0b0 for 10 to 12 minutes until golden.
- Cut in half and top with strawberries and cream.
- Makes 6 servings.
