Raisin Rolls With Coconut Icing
- 1/2 cup all-purpose flour
- 1 cup raisins
- 3 1/2 tsp active dry yeast
- 1/2 cup warm milk + 2 tbsp
- 2 tbsp granulated sugar
- None None Icing
- 1 cup powdered sugar
- 1 tbsp butter, softened
- 2-3 drops pink food coloring
- 1 cup shredded coconut
- Sift together flour and 1/2 tsp salt. Add raisins and yeast. Combine 1/2 cup warm water, 1/2 cup milk and 1 tbsp sugar. Stir until sugar dissolves then add to dry ingredients and mix until combined. Turn out onto a lightly floured surface and knead until smooth and elastic.
- Place dough in a large, oiled bowl. Set aside, covered, until doubled in size, about 1 hour.
- De-gas then divide into 10 equal portions. Shape into rolls about 4 inches long. Place close together on a greased baking tray. Set aside, covered, until doubled in size, about 30 mins.
- Preheat oven to 400u0b0F. Bake rolls for 20-25 mins, until golden brown.
- Meanwhile, combine remaining milk and sugar and stir until sugar dissolves. Brush over hot buns. Transfer to a wire rack to cool.
- To make the icing, combine powdered sugar, butter, 1 tbsp hot water and food coloring and mix until smooth. Spread over buns then sprinkle with coconut.
