Green Salad With Fresh Fruit And Nuts
- 4 tbsp balsamic vinegar
- 3 tbsp agave syrup
- 1 tsp wholegrain mustard
- 3 tbsp olive oil
- 400 g mixed baby leaf salad
- 1/2 None cucumber, peeled, halved lengthways and sliced
- 125 g blackberries, halved
- 125 g redcurrants
- 5 sprigs fresh mint, leaves stripped from stems
- 6 sprigs fresh dill, leaves stripped from stems
- 125 g salted pistachios, shells removed
- To make the dressing, mix the vinegar, agave syrup and mustard in a bowl and whisk in the oil in a thin stream. Season with salt and black pepper.
- To assemble the salad, add the lettuce, cucumber, blackberries, blueberries, mint and dill to a salad bowl. Toss with the dressing and sprinkle with the pistachios.
