Ham, Cheese And Potato Gratin
- 1 3/4 lbs waxy potatoes
- 1/2 None Savoy cabbage, trimmed and sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 3/4 cup vegetable stock
- 3/4 cup milk
- 2 tbsp Dijon mustard
- 2 tbsp sunflower oil
- 1 1/3 lbs smoked ham, diced
- 1 1/2 cups Swiss cheese, shredded
- Cook the potatoes in plenty of boiling, salted water for 18-20 mins, until cooked through. Meanwhile, blanch the cabbage in a separate pan of boiling, salted water for 3-4 mins then drain.
- Preheat the oven to 400u0b0F. Melt the butter in a saucepan then stir in the flour until smooth. Whisk in the stock and milk then bring to a boil and simmer for 3-5 mins, until thickened. Stir in the mustard and season. Set aside.
- Heat the oil in a skillet, add the ham and fry until crispy. Drain the potatoes and run under cold water until cool enough to handle. Peel the potatoes then place in a greased baking dish. Arrange the cabbage and ham on top then pour over the sauce. Lay the cheese on top then bake for 25-30 mins. Serve.
