Apple Cupcakes With Streusel Topping

  1. Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
  2. For the streusel topping, combine the flour, brown sugar and cinnamon in a bowl. Using your fingertips, rub in the butter, then stir in the pecans. Set aside.
  3. For the cupcakes, beat the butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Beat in the vanilla extract. Add the eggs, one at a time, beating well after each addition. Fold in the flour alternately with the milk, beginning and ending with the flour. Fold in the apple.
  4. Spoon batter into muffin cups, filling each 2/3 full. Sprinkle with streusel topping.
  5. Bake for 20-25 mins or until a toothpick inserted in center comes out clean. Cool in the pan for 5 mins. Remove from pan; cool completely on a wire rack.
