Apple Cupcakes With Streusel Topping

- 1/4 cup flour
- 2 tbsp packed brown sugar
- 1 tsp ground cinnamon
- 3 tbsp butter, at room temperature, chopped
- 1/3 cup chopped pecans

- 8 tbsp (1 stick) butter, at room temperature, chopped
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 2 None eggs
- 2 cups self-rising flour, sifted
- 2/3 cup milk
- 1 None Granny Smith apple, peeled, cored and finely chopped
- Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- For the streusel topping, combine the flour, brown sugar and cinnamon in a bowl. Using your fingertips, rub in the butter, then stir in the pecans. Set aside.
- For the cupcakes, beat the butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Beat in the vanilla extract. Add the eggs, one at a time, beating well after each addition. Fold in the flour alternately with the milk, beginning and ending with the flour. Fold in the apple.
- Spoon batter into muffin cups, filling each 2/3 full. Sprinkle with streusel topping.
- Bake for 20-25 mins or until a toothpick inserted in center comes out clean. Cool in the pan for 5 mins. Remove from pan; cool completely on a wire rack.
