Sausage And Tomato Pilaf

  1. Heat oil in a frying pan on high. Cook sausages 4-5 mins, until cooked through. Remove from pan and slice. Saute onion and pepper in same pan 2-3 mins. Stir in rice and cayenne pepper. Return sausage to pan along with half of stock. Bring to a boil. Reduce heat and simmer 3-4 mins, until liquid has been absorbed. Add tomatoes and remaining stock. Cook, uncovered, 10 mins, until liquid is absorbed and rice is tender. Add chickpeas and peas. Heat, stirring, 2 mins. Sprinkle with parsley and serve with salad and crusty bread.
