Spiced Chicken With Couscous Stuffing

  1. Preheat the oven to 400u0b0F.
  2. Combine couscous, figs, almonds, garlic, cilantro, orange peel and juice, and 1/4 cup water in a medium bowl. Season with sea salt and pepper. Let stand for 5 mins.
  3. Pat hens dry with a paper towel; stuff with the couscous mixture. Tie legs with twine.
  4. Combine spices and salt in a small bowl. Sprinkle 1/2 of the mixture over both hens.
  5. Place carrots and parsnips in a roasting pan. Drizzle with 1 tbsp of the olive oil. Season with remaining spice mix. Place hens on top of the vegetables; drizzle with remaining oil.
  6. Bake 1 hour to 1 hour 15 mins or until hens are cooked through. Remove hens to platter. Let stand 5-10 mins.
  7. To serve, cut each hen into 4 pieces. Serve with couscous stuffing and vegetables.
