Cold Roast Beef With Pan Fried Potatoes And Roasted Red Peppers
- 1 kg potatoes, peeled
- 3 tbsp butter
- 1 None red onion, peeled and finely diced
- 150 g roasted red peppers (from a jar), drained and diced
- 30 g pitted black olives, chopped
- 2 None spring onions, thinly sliced
- 3 sprigs fresh flat-leaf parsley, finely chopped
- 1 tsp white balsamic vinegar
- 12 slices roast beef
- Cook the potatoes in boiling salted water for 20 mins. Drain, allow to cool and cut into slices.
- Melt the butter in a large frying pan and cook the potatoes for 10 mins, turning frequently, until browned and crispy, adding the onion after 8 mins. Season with salt and black pepper.
- In a bowl, mix the peppers, olives, green onions and parsley. Stir in the vinegar and season with salt, black pepper and a pinch of sugar.
- Arrange the beef and potatoes on serving plates and top with the pepper mixture.
