Ham And Eggs With New Potatoes And Creamed Spinach
- 2 lbs new potatoes
- 3 tbsp oil
- 2 None onions, peeled and finely diced
- 3 lbs baby spinach
- 3/4 cup half and half
- None None Grated nutmeg, according to taste
- 4 slices Canadian ham
- 1 tbsp butter
- 4 None eggs
- Cook the potatoes in boiling salted water for 20 mins, until tender. Drain and keep warm.
- Meanwhile, heat 1 tbsp oil in a saucepan and saute the onions until softened. Add half the spinach and allow to wilt a little, then add the remaining spinach and simmer over a medium heat for 8 mins. Season with salt, black pepper and nutmeg and stir in the cream. Simmer for 1 min, then remove from the heat and keep warm.
- Heat 2 tbsp oil in a frying pan and fry the over ham high heat for 2 mins on each side, or until cooked through and browned. Season with salt and black pepper.
- Melt the butter in a separate frying pan and fry the eggs to your liking. Arrange the ham on plates and top with the eggs. Serve with the potatoes and spinach.
